
Lean Chicken & Spinach Wraps
Quick-assembly wraps with shredded chicken, cream cheese, and baby spinach rolled in soft tortillas. Low in fat and fiber so they sit light in your stomach, and easy to batch-prep for the week — just grab one from the fridge before heading to the track.
Instructions
In a medium bowl, combine the shredded or diced cooked chicken breast with the light cream cheese, garlic powder, salt, and black pepper. Mix well until the chicken is evenly coated.
Lightly warm the spinach tortillas in a microwave for 10-15 seconds or in a dry pan for a few seconds per side to make them more pliable.
Lay out each warm tortilla. Spread an even layer of the chicken mixture over the center of each tortilla, leaving a small border.
Top the chicken mixture with a handful of fresh baby spinach leaves. Carefully roll up each tortilla tightly to form a wrap.
Serve immediately or pack for later consumption, ensuring it is eaten within the recommended pre-run window.
