
Date & Peanut Butter Energy Bars
Chewy, dense bars made with just dates, oats, peanut butter, and chia seeds — pressed, chilled, and sliced. No baking required. Throw one in your bag for an easy fuel source that holds up well at room temperature all day.
Instructions
In a food processor, combine the pitted Medjool dates, natural peanut butter, maple syrup (if using), vanilla extract, and a pinch of salt. Process until a thick, sticky paste forms.
Add the rolled oats and chia seeds to the food processor. Pulse until just combined and the mixture is crumbly but holds together when pressed.
Press the mixture firmly into silicone bar molds or a parchment-lined 8x8 inch (20x20 cm) baking dish. Ensure it is evenly distributed and compacted.
Refrigerate for at least 20 minutes, or until firm. If using a baking dish, remove from the dish and cut into 4-5 bars.
